The restaurant you are sitting in supports the rebuilding of the world’s oceans! By enjoying certain dishes, you can also make a contribution and help, for example, fishermen around the world to build a second leg or also counteract the overfishing of tuna.
A single table is equipped with special chairs, the Oceans Table. Made from recycled fishing nets, each chair is not only unique, but also a reminder of the sad fact that 30-50% of plastic pollution in the ocean is due to so-called ghost nets.
But there are also positive developments! So let’s enjoy consciously and do some good.
Two products on the menu stand out when it comes to sustainable management of the world’s oceans:
KVARØY ARCTIC LACHS
Perhaps the most sustainably farmed salmon in the world. Raised in the fjords of Norway, Kvarøy Arctic pays attention to sustainability in all aspects of aqua culture farming.
This ranges from their supply chain technology using blockchain tracing, to optimized feeding with high vegetarian share, to robotic fish that can collect empirical data in the pens and even perform minor medical interventions.
But we are only scratching the surface, there is more to discover!
Tuna substitute based on field beans and seaweed.
This is special because the algae used are real superfoods! They grow in all the world’s oceans, have excellent nutritional values and enable alternative, sustainable business models for fishing communities.
The Oceans Table is a campaign of The Pool Chefs Companion & the NGO Oceans 2050 around Alexandra Cousteau and Professor Carlos Duarte.
